Mung bean bread

Mung beans are known for being light and easy to digest, making them an ideal food for cleansing and for those with sensitive digestive systems

In Ayurveda, they are also considered detoxifying, helping to cleanse the liver and gallbladder, and remove unwanted waste from the body

Ingredients:

  • 250g mung beans rinsed and soaked overnight (soaked weight 530g)
  • 2 tbsp olive oil
  • 1 tbsp rosemary or thyme
  • Small clove of garlic, chopped
  • 1⁄2 tsp asafoetida (or hing)
  • 1⁄2 tsp baking soda
  • 1⁄2 tsp salt
  • Pinch of pepper
  • Juice of 1 lemon

Method:

  1. Preheat the oven to 180 degrees. 
  2. Drain the mung beans and put them in the food processor (or a strong blender). 
  3. In another bowl, mix the oil, rosemary, garlic, hing, baking soda, salt and pepper and lemon juice with 130ml water (at room temperature). 
  4. Add this to the mung bean mixture and stir well. 
  5. Put baking paper in a cake tin and pour the mixture in. 
  6. Bake the bread for 20-25 until done. 

Enjoy your warm mung bean bread or fry both sides. 

Very tasty to serve with hummus or a bowl of soup.
