Vegan Banana Bread Recipe

 

Here is a classic recipe for a moist, delicious banana bread. It is wonderful toasted and loaded with other toppings. This is a great way to use up overly-ripe bananas. This loaf can also be frozen.

Ingredients:

  • 1 1/4 cups white flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 ripe medium mashed bananas
  • 3/4 cup sugar
  • ½ cup mylk
  • 1/2 cup vegetable oil
  • 1 tsp pure vanilla essence
  • 1 cup vegan dark chocolate chips

Method:

Preheat your oven to 180c. Line a loaf pan with baking paper and spray lightly with oil. Grab a medium bowl and whisk together your dry ingredients. In a separate bowl, whisk together your wet ingredients. Once combined, fold into your dry ingredients gently. The secret to this recipe is to not over mix it, or risk having a very dry, dense loaf! Only mix until it has just come together. Pour the mixture into your pan and bake for around 55 minutes, or until a tester stick comes out completely clean. Transfer the pan to a wire rack and leave to cool completely.
